Costa Rica Corazon De Jesus Natural Espresso - Single OriginThis lot is grown on El Salitre farm, owned by Johnny Alvarado and his family. It is a naturally processed lot that comes from their family micro-mill named Corazon De Jesus. This is a family affair, incorporating four coffee producing farms across the Brunca region.Harvesting the ripest cherries to start, polypropelene bags are used for a 2 day in-cherry pre-fermentation stage under shade. On the third day the cherries are laid out on patios and piled and covered at night, repeated over ten days. During the heat of the day, the cherries are raked three times, promoting airflow.
